My fellow creator Ebin dove straight into the Bun Parotta served with Pork Vindaloo. Unlike the vinegary Goan style, Fort Kochi style Vindaloo relies on a subtle blend of roasted red spices and mild acidity. Paired with hot, flaky, oil-crisped Bun Parotta, it stood out as one of the highlights of the night.

4. Prawns & Basmati Rice Fusion

Towards the end of the feast, I tasted the Prawns Basmati Rice. It had a subtle, refined flavor profile where the delicate sweetness of fresh prawns, aromatic basmati grains, and golden ghee harmonized effortlessly.
