  • 2 cups sour curd (whisked)
  • 1/4 teaspoon turmeric powder
  • Salt to taste
  • 1 cup water

For Grinding

  • 1 cup grated coconut
  • 2 green chillies
  • 1/2 teaspoon cumin seeds

For Tempering

  • 1 tablespoon coconut oil
  • 1/2 teaspoon mustard seeds
  • 2 dried red chillies
  • 1 sprig curry leaves
  • 1/4 teaspoon fenugreek seeds (optional)

Instructions

Step 1: Peel and cut the ash gourd into medium-sized cubes.

Step 2: Add the ash gourd, turmeric powder, salt, and water to a saucepan.

Step 3: Cook on medium flame until the ash gourd becomes soft but still holds its shape.

Step 4: Meanwhile, grind the grated coconut, green chillies, and cumin seeds into a smooth paste using a little water.

Step 5: Add the coconut paste to the cooked ash gourd and mix well.

Step 6: Simmer gently for 3–4 minutes. Do not allow it to boil vigorously.
