During our visit to Jaipur, one of the most memorable food experiences wasn’t a grand meal but a simple cup of hot ginger tea. We stopped at the famous Gulab Ji Chai Wale near Sindhi Camp and enjoyed a strong, aromatic chai (Jaipur Ginger Tea) that perfectly complemented the cool morning weather.
This recipe is inspired by that experience. While every tea stall has its own secret proportions, this version recreates the bold ginger flavour, creamy texture, and comforting warmth that make North Indian chai so popular.

Ingredients
To prepare a simple yet delicious Jaipur ginger tea, we need the following ingredients.
- Water – 1 cup
- Milk – 1 cup
- Tea Powder (CTC Tea) – 2 teaspoons
- Fresh Ginger – 1 inch piece, crushed
- Sugar – 2 to 3 teaspoons (adjust to taste)
Instructions
Step 1: Crush the ginger using a mortar and pestle or lightly crush it with the back of a knife.
Step 2: Add water to a saucepan and bring it to a gentle boil.
Step 3: Add the crushed ginger and allow it to simmer for 2 to 3 minutes so the flavour infuses into the water.
Step 4: Add tea powder and continue boiling for another minute.
Step 5: Pour in the milk and add sugar.
Step 6: Allow the tea to rise slowly and simmer for 3 to 4 minutes. Stir occasionally.
Step 7: Strain into cups and serve hot.
