What about a simple Kerala mutton stew recipe? Mutton stew or lamb stew is prepared in many different ways in different places. This is a Kerala style mutton stew recipe where we use coconut milk. This recipe was adopted from my mom’s kitchen, but with slight changes.
Step 1: Wash mutton pieces with bone and transfer it to a pressure cooker.
Step 2: Add salt to taste and 1/2 tsp of black pepper and mix well.
Step 3: Pressure cook it for 3 – 4 whistles on medium flame (depending on the lamb).
Step 4: In a cooking pan (sauce pan), add 1 tbs of ghee and heat it.
Step 5: Fry cashew nuts in ghee until golden brown and keep the cashew nuts aside.
Step 6: Fry thinly sliced onions (half onion) and keep it aside.
Step 5: Add Cardamom, Cinnamon stick, Star anise, and cloves to it and sauté for a while.
Step 6: Sauté sliced green chillies, then add ginger and garlic paste to sauté.
Step 7: Add sliced onions and cook until translucent.
Step 8: Add diced potatoes and carrot. (some people even add tomatoes)
Step 9: Add pressure cooked mutton to the cooking pan. Add thin coconut milk and salt to taste to it. Cook until the mutton, potatoes, and carrots are cooked well.
Step 10: Add some crushed black pepper and garam masala. Add some curry leaves. Mix well.
Step 11: Lower the flame, and add thick coconut milk. Give it a stir and finally add fried cashew nuts and fried onion to it.
Mutton stew is a perfect combination for Appam, Puttu, Idiyappam, and even bread.
