Tamil Nadu’s Kolli Malai or Kolli Hills is a charming but little-visited hill-station. We stayed at a lovely homestay called Sunnyside Kolli Malai during our most recent trip to Kolli Malai. Kolli Malai Dum Biriyani, a delicious variation of south Indian biryani, was made by Mrs. Sarah, the homestay’s cook. This Tamil Nadu biriyani can be prepared at home as well. Here is the whole Kolli Malai Dum Biriyani recipe.

Kolli Malai Dum Biriyani Recipe – How to make it at home?

Ingredients

Jeera semba rice: 1 kg
Chicken: 1 kg
Big Onions: 4
Tomatoes: 4
Oil: 200 gms
Cardamom: 10
Cloves: 15
Cinnamon: 2 pcs
Dry chili soaked and ground: 12 nos
Green chilies: 6 nos
Ginger garlic paste: 6 tsp
Garam masala: 2 tsp
Ghee: 3 tbs
Curd: 1 cup
Lemon: 1/2 nos
Coriander leaves: one hand full
Mint leaves: one hand full
Salt to taste
Hot water double the quantity of rice

Method

Step 1: Marinate chicken with ground chill paste, ginger garlic paste, little coriander and mint leaves. Leave it for 1 hour.

Step 2: Soak the rice in water for 10 minutes and drain.

Step 3: In a heavy bottom biriyani pan, add oil, cinnamon, cloves and cardamom.

Step 4: Add onion and fry till it becomes golden brown. Add tomatoes, fry for 3 minutes. Add ginger garlic paste fry until the rawness fades. Add ground dry chili paste and garam masala and fry well. Add green chilies, curd, coriander leaves and mint leaves.

Step 5: Add marinated chicken mix well and fry for 7 minutes. Add hot water and salt to taste and allow the soup to boil. Add rice and mix well. Add lemon juice and ghee, and cover and cook for 15 minutes.

Step 6: Reduce fire and add burning charcoal over the lid and let the biriyani be on dum for 20 minutes.

Step 7: After 20 minutes, remove the charcoal from the lid, open the lid, mix and serve Kolli Malai Biriyani.
