Are you a mutton lover who enjoys having different varieties of Mutton recipes? If so, Gowdara Mudde Mane at Raghuvanahalli on the outskirts of Bengaluru city serves you delicious mutton dishes which you might not have tasted yet. Chandrasekhar, the one who owns the restaurant is actively heading the cooking section and when we got there, he was very busy with the preparation of Mutton Pulao. Mudde is nothing but the Ragi (finger millet) ball which is quite famous throughout the state of Karnataka. Mudde Mane means the house of Ragi balls and we can have soft Ragi balls with a long list of mutton recipes which you could choose from.

I was given permission to witness the kitchen and have a first-hand view of the ways by which these mutton dishes have been made. It was quite fascinating to see various Mutton recipes being cooked simultaneously and the people who are in charge of all these preparations looked busy. Each of these recipes has distinct masala combinations and it was quite intriguing. Some of the dishes over the stove were Mutton Nelli, Mutton Chaps, Mutton Keema Gojju and the Ragi Mudde. Since it’s not a huge restaurant with a large kitchen area, it looked a bit congested, but space is not a luxury that you can demand.

Chandrasekhar was in charge of the Mutton Pulao preparation and he shared with me the fact that the pulao would only be available on Sundays and Wednesdays. Earlier days saw Pulao merely served on Sundays and with the demand from the public, they have introduced this dish also on Wednesdays. When we were discussing the preparations, coconut milk has been poured over the Pulao and that gives this dish a delicious flavour. One of the other recipes that grabbed my attention is the cooking of Mutton Parts which includes almost all the organs like the liver, kidney, heart and even testicles. All these are boiled in the initial phase and later it’s been cooked with masala.

My friend Martin was having Ragi Mudde while his cousin Nirmal has gone for Akki roti (rice roti). I was having Jolaka roti and all these recipes were served with Mutton gravy. I took a small piece of Ragi Mudde from Martin to have the taste. It tastes well with gravy and it’s better to swallow as the ragi has the tendency to stick to the teeth if chewed. The Mutton tail recipe was also available and it’s been called Doom Tawa Roast. It’s crispy on the outside and a bit chewy with a nice flavour. Apparently, Mutton chaps were the favourite dish of the Keralites. Mutton Karela fry is another dish which is crispy on the outside and is a bone piece. Karela is nothing but bitter gourd and the similarities in shape have given this dish the name Mutton Karela.

Different parts of Mutton are being used in making different dishes like Mutton Chaps, Mutton Parts, Mutton Brain, Mutton lollipops and so on. The ribs are used in making Mutton Chaps and the brain is used in making Mutton brain roasts. The latter dish might not be a cup of tea for everyone as it’s a bit gooey in nature. It feels as though we are having the Kalaki omelette when we have the Mutton Brain recipe. The presence of curry leaves imparts more flavour and the masala used has a really good taste. Unlike the normal pulao from Karnataka, Mutton Pulao had a slightly distinct taste and it has many vegetables that enhance the flavour. I felt it tastier with mutton gravy and the Mutton biriyani on the other hand has a rich ghee flavour which again was good.

The parking facility is not available for the restaurant and you would have to make use of the roadside to park your vehicle. Gowdara Mudde Mane in Bangalore offers you many more vegetarian as well as non-veg recipes and if you like to have Mutton recipes with the Karnataka style of cooking, the restaurant would be a nice choice to have a visit.
