Have you had a chance to taste steamed Biriyani? No, I am not talking about the traditional Dum Biriyani. Avians Biriyani restaurant in Kochi is attracting quite a lot of attention with a delicious Mangalorean Biriyani variety. The main attraction of these Biriyani is the taste of its rice. The Avians Biriyani shop is located exactly at a place called Palluruthy beside the ground. The restaurant has been open for 5 months and since its early days, they are getting great responses from people.
We reached the restaurant by noon and parked the car at the nearby ground. My friend Jafar is with me and when we were about to walk from the ground, we saw a flock of pigeons close by. They looked as if they are in the midst of an important meeting and doesnβt bother to mind our presence. Avians Biriyani shop is run by twins, Jinu and Binu. They look the same and we found it difficult to distinguish them. Binu served us the Biriyani and Jinu was in charge of the kitchen. We have the choice to go for Chicken or Beef, in fact, both Biriyani varieties are available and you can opt according to your taste. I choose to have Beef Biriyani, while Jafar had Chicken Biriyani.
When you think of the normal Biriyani preparations, Avians Biriyani shop is quite unique in this regard. My friend Jaffer tasted the Biriyani and indicated that the flavour is quite special, even the rice carries the real essence of the spices. He has also mentioned the touch of spiciness it brings as it might be because of the masala used. Small biriyani rice is used in this dish. Apparently, a person called Aliba from Mangalore has taught them this distinctive method of making the biriyani.
The biriyani preparation starts with making the Chicken or Beef curry. Later the rice is boiled in water which is mixed with whole varieties of spices like cinnamon, cardamom, cloves and so on. When the rice is about 80 per cent cooked, it is transferred to a bigger vessel for steaming. The water used in this vessel would contain a special masala and spices. The vessel is filled with rice in a layered manner where the gravy from the curries would be added in between the rice. Sauteed onion pieces will be spread over the top and the vessel will be closed for steaming. The rice will be steamed for about 20 minutes and this gives the fragrance to the rice.
