Chicken fries are considered to be one of the favourite recipes of non-vegetarians. Crispy fried chicken pieces along with the masala can be served with any of the dishes like Parotta, Appam, Chappati, Boiled rice and so on. The true secret of this recipe lies with the masala being used for its preparation. Curry leaves and sliced onion pieces are the other ingredients which have a major say in the taste. The oil used for frying the chicken pieces also has an undeniable involvement in imparting a delicious flavour. Fresh and recently acquired coconut oil will do the job, but if you are using any other cooking oil, then there exists the possibility of a slight change of taste. Anas Hotel in Trivandrum has been quite famous for its special Chicken fries and it’s been suggested to me by my friend Harri who happens to be a frequent visitor to this shop.

Trivandrum in Kerala is quite famous for its different varieties of chicken fries. I did taste the Kethel chicken and tried out the chicken fry from Vizhinjam in Trivandrum. Anas Hotel in Trivandrum serves us yet another chicken fry variety which is so delicious to have. The exact place at which this food spot is located is called by the name Vallakkadavu. As we got to the restaurant, we have seen chicken pieces being fried in large frying pans with delicious masalas used for flavour. It had a perfect colour to it and feels as if it was not as spicy as the chicken fry we had from Vizhinjam. We can have these special chicken fries with Parotta, Pathiri, Appam, Idiyappam and so on.

As we were about to enter the shop, we have seen parotta and chicken fries being made on either side of the entrance. Many people were choosing to get the order parcelled for home or workplace. It appears that the food is being parcelled in banana leaves rather than plastic foils and it looks to be a commendable practice. We have ordered Chicken fry and Tomato roast along with Parotta and Idiyappam. While I choose to have Idiyappam, Harri had Parotta. Even though food is normally served on steel plates, we made our request to have banana leaves for serving the food, which involved extra payment.

Chicken fry was served with sliced onion pieces and lemon to have an improved flavour. The masala used in the recipe has an adequate spicy flavour and this makes it ideal to be had with any of the dishes. Grated coconut pieces were one of the ingredients used for the masala and it felt really tasty with Idiyappam. They would serve you more masala if you choose to make a request. The chicken was not fried to hard pieces, instead, they were perfectly fried with softness inside. Also, the taste of coconut oil was very evident in the fries and it also played a crucial role.

Tomato roast also had a really cute flavour. The slightly tangy flavour and the light sweetness of the tomatoes give this dish an attractive feel. The crunchy nature of the onion pieces in the dish makes it more attractive. It tasted really well with Idiyappam and Parotta. For all the customers who choose to take parcels from this restaurant were reminded of an instruction on a small board displayed in the shop. It states that the food which is taken as a parcel should be consumed within 2 hours from packing. I felt this to be appreciative behaviour from the part of the food spot. They have chosen to inform customers about the fact that the food will start to lose its taste and ultimately get spoiled if it’s been kept for more time.
