Planter’s Chicken is a Munnar special chicken variety cooked with the flavours of Kerala’s spices. We have tried this cuisine at the Dream Catcher Plantation Resort in Munnar, Kerala. I got this unique recipe from an authentic Munnarite, the chef of Dream Catcher Resort.
Ingredients for Planter’s Chicken
Precooked boneless chicken cubes
For masala paste
– Green pepper corns
– Bird’s eye chili
– Curry leaves
For tempering and cooking
– Thinly sliced onions
– Tomato slices
– Mustard seeds
– Red chilies (dry)
– Coconut oil
– Garam masala
– Black cumin powder
– Turmeric powder
– Coriander powder
– Chili powder
– Cashew nut paste
– Salt to taste
– Curry leaves

Preparation & Cooking
For our planter’s chicken recipe, grind all the ingredients for masala paste to a smooth mix of green peppercorn masala.
Heat a pan and add some coconut oil. Add mustard to temper. Add chopped garlic, chopped ginger, and dry red chilies. Add curry leaves, onions and chopped shallots. Cook them for a while (2 to 3 minutes) over medium low flame.
Add sliced tomato and cook for a while.
Now it’s time for masalas: Add all masala powders for tempering. Saute for a while.
Add cashew nut paste and cook for a while. Once cashew nut paste and the masalas are cooked and blend, you can add the masala paste and cook for a while.
Add chicken cubes and cook for 2 to 3 minutes on medium flame. Now you add chicken stock; cover and cook for 1 to 2 minutes. Serve hot with chapatis or rice. We enjoyed it with Capsicum Masala Rice.
